Actress Park Ha-sun and Professor Seo Kyung-duk of Sungshin Women's University are drawing attention by releasing a video highlighting the future value of kimchi in celebration of ‘Kimchi Day’.

Professor Seo Kyung-duk, who is serving as a global ambassador for the World Kimchi Research Institute under the Ministry of Science and ICT, and Park Ha-sun produced a video titled ‘The Power of Science, The Future of Kimchi’ and released it on YouTube on the 22nd. This 4 minutes and 30 seconds long video will start with a Korean version and will gradually expand to multiple language versions to meet viewers worldwide.

The video focuses on the trend of expanding the perception of kimchi beyond a simple traditional fermented food to various industrial fields such as bio, medical, and cosmetics. In particular, as research on probiotics derived from kimchi is emerging as a key technology that will determine global industrial competitiveness, it conveys the message that a fusion of traditional manufacturing methods and advanced science and technology is necessary.

Professor Seo Kyung-duk, who planned the project, explained, “Kimchi is establishing itself as a ‘global superfood’ recognized for various functionalities such as anti-obesity and anti-cancer,” and added, “There is growing global interest to the extent that several countries celebrate ‘Kimchi Day’.” He continued, “Currently, kimchi is exported to over 90 countries, and the future value of the kimchi industry will only grow,” emphasizing the economic and cultural potential of kimchi.

Narrator Park Ha-sun expressed, “It is significant to be part of the work introducing the future of kimchi in celebration of ‘Kimchi Day’,” and said, “I hope many viewers will gain a new perspective on the value of kimchi through this video.”

This project, which interprets traditional food kimchi in the language of science and industry, is expected to elevate the status of K-food even beyond ‘Kimchi Day’.
